Salt is a symbol of superstitious beliefs. When Knox unintentionally knocks over the salt shaker while he is eating with Maeve, she throws a pinch of salt over her shoulder. She believes that she has to do this to ward off bad luck.

Bloody Napkin

This bloody napkin is a symbol of fear. When Maeve feels moisture leaking from her nose and looks at her napkin to see that her nose is bleeding, she fears that her cancer is returning. She indicates that each time she has had a re-occurrence, one of the first symptoms has been a nosebleed.
