1. What is the Night's Watch?

The Night's Watch is a group of soldiers who guard the Wall that protects the "civilized" world from the wild. In actuality, the wall simply divides the Seven Kingdoms from everything else. A series of organized kingdoms and people live inside the wall. Wild outlaws and the "Others", the undead, live outside the wall. It is the duty of the Night's Watch to keep the wild things out of the kingdom. These soldiers have a main camp in an ancient fort called the Fist of the First Men.

2. Why is Jamie Lannister trying to hide his identity in Chapter 2?

Jamie Lannister is trying to hide his identity because he a prisoner trying to escape to King's Landing. He shaves his head so he will not be recognized and sent back to the Stark clan. Catelyn Stark released Jamie without consent so that Jamie can convince his brother, Tyrion, to release Catelyn's daughters, Sansa and Arya. Jamie is a secretive character. He has hidden his incestuous relationship and child with his sister Cersei from the world, and is willing to kill anyone who threatens his safety.
