Molecules in a solid (such as ice) are moving very slowly. When they come into contact with a heat source, the water molecules begin to speed up, changing the state of matter into a liquid. As the liquid continues to heat up further, the molecules move so quickly (called an excited state) to the point where they turn into a vapor and then steam.
