alkaloids are alkaline in nature witha ph >7 while acids have a ph<7.water has a neutral ph of about 7.So when alkaloids are in acid medium there is a greater ionic gradient as well as charge reactivity trend in terms of OH- and H+.While in water this gradient is reduced and will need a higher energy to drive the raction than when the gradient was more.
