Who is Will Barbee from Up in the Old Hotel and Other Stories and what is their importance?

Will Barbee is the man who owned a diamondback terrapin farm on the Isle of Hope. Barbee inherited the operation from his father who had seen a market for the terrapins and set up the farm. Barbee explained the farming operation to Mitchell from the breeding operation to the final stages of feeding and packaging the terrapins for sale.
