How does Toad play on inexperienced Mole? What is Mole inexperienced at?

I think you are referring to chapter 2 when Toad tries to entice Mole into an adventure. Mole isn't used to peer pressure or any kind of social interaction so Toad dazzles him with the promise of excitement if he goes on the trip.
