Who is Giacomo Paradisi from The Subtle Knife and what is their importance?

Giacomo Paradisi is the last of the philiosphers of the Torre degli Angeli.... the last true bearer of the knife before Will. He is very old and near death when Will and Lyra find him in the Torre degli Angeli, but he is able to show Will how to open and close with the knife.
