The Ancient Mariner shot the albatross simply because he could. He was angry because the voyage was moving slowly and frustrated over the lack of wind. Without even thinking, he took the life of the albatross.... an innocent bird that the others saw as a good omen. In the end, the Mariner pays the price for his thoughtless actions.
