Who is Sekhmet from The Red Pyramid and what is their importance?

Sekhmet is the lion goddess. Desjardins summons Sekhmet against Carter and Sadie in Las Cruces. They defeat Sekhmet by convincing her to gorge on salsa and telling her it is the blood of her enemies, until she falls asleep.
