Why did Mitch figure his clients liked the Impatiens despite the fact that they were scentless in the novel, The Husband?

Mitch figured that these particular clients liked the Impatiens because of their saturated colors. They were vibrant red, purple, deep yellow and hot pink. They didn't like pastels at all. Mitch understood that they had been raised poor and that they viewed life intensely, and thus saturated colors reflected the truth of nature's vehemence.
