I think this quote really sums up a major theme in Gatsby. Gatsby's world is full of illusion. Gatsby's grasp of reality is really only projections of what he wants his life to be like. His view of Daisy, for example, is merely illusion. His mansion and riches are predicated on the idea that Daisy will love him and be loyal to him. This just isn't the case hence Gatsby returns to his obsession, "watching over nothing".
