What effect did the loss of the vegetable man have on the families?

Anne was extremely happy to be rid of the vegetables (there are none available). The others in the annex realize how the lack of vegetables might negatively effect their lives.

Now, however, we're going through the most delightful period so far, because there are no vegetables at all.
