What crops were grown on the plantation in the book, Nightjohn?

The reader gets very little physical description of the Waller plantation. All that is revealed is that there is a “big house” where the Wallers live, a spring house, a breeding shack, a sleeping shack, and fields (although the crop is never revealed) where the slaves work.
