The fallen star which the Red Cow removes from her horn is a symbol of happiness: it single-handedly caused her to dance and, though she only realized it once the dancing ceased, it was this act which brought her a great sense of happiness. The Red Cow's realization of the fallen star's power leads her to fear that she will never find another star with which to begin dancing, and it is only Mary Poppins' mother's reassurance that many such stars exist that finally calms the Red Cow down and leads her to begin her long search for the next star, the next source of her happiness. As such, this star symbolizes not only happiness but also the never-ending search for happiness which all humans embark on throughout their lives.
