The Italian sailor repeats versions of the phrase, "I don't want anything to do with it..." several times. Why does he say this, yet still help David

The Italian sailor doesn't want to involve himself in David's life, and he doesn't want to get himself into trouble..... he is also torn by compassion. Thus, he helps David all while trying to convince himself against doing so.
