Why do Kingsolver and her family decide to leave Arizona and move to their farm in Appalachia?

Kingsolver and her family felt as if they were an unnecessary drain on local resources in Arizona, especially water. They owned property in the Appalachia region and spent their summers there, but at this point they decide to move there full time.
