What is the significance of Dr Manette's shoemaking?

While in prison, Dr. Manette loses himself in shoemaking to survive the emotional ramification of imprisonment. He shuts himself off and focuses on the completion of a task. When he resumes shoemaking after different events in the novel, we know that he is emotionally unable to what is happening around him. Shoemaking is a form of self-protection.
