There is actually some historical context to this. "A Good Man is Hard to Find" is actually the title lyric of a song composed and performed by Eddie Green in 1918. The song was pretty popular. When we examine the following lyrics, it becomes evident why O'Connor used them,

A good man is hard to findYou always get the other kind

We certainly get "the other kind" in the story.
