MERCAPTANS

Also known as thioalcohols, these are aliphatic compounds containing sulfur. The structure is similar to alcohols but oxygen is replaced by sulfur. These compounds have offensive odors. The Kraft, or sulfate, process for pulping wood produces mercaptans. Mercaptans have been found to be toxic to fish.
