agar

A seaweed extract, also known as agar-agar, used as a solidifying or gelling agent used in cooking. In microbiology it is used to solidify bacterial growth media prior to spreading on an AGAR PLATE.

One of its most useable characteristics is that it melts at around 80–90°C but only solidifies at around 40°C. It then remains solid until it achieves melting temperature again.
