Mr. White is a family man. He's happy, comfortable, and enjoying life. At times (playing chess), he's impetuous and a bit reckless. It's possibly this tendency toward impetuous behavior that leads him to grab the paw and make a wish without considering the Sargeant-Major's warning seriously. All in all, Mr. White is very likeable, and although, some people perceive him as greedy, I'd have to disagree. Mr. White's wish merely covered the amount he owed on his home.... it certainly wasn't greedy or outrageous.
