Why does Winston feel he has to write down his encounter with the prole prostitute?

This was not a pleasant encounter. The Prole woman turned out to be old and desperate for money. Winston goes through with the act anyway. He is repulsed by what he did, he hopes for some kind of catharsis or emotional purging by writing it down.
