Who is Miss Helen from My Year of Meats and what is their importance?

Miss Helen is a black woman in the south that Jane wants to showcase on My American Wife! Jane visits Miss Helen during one of Ueno's many surprise visits. During their interview, Miss Helen and her husband, Purcell, admit that he once had side effects from eating chicken parts loaded with DES. This is the first time Jane has heard of DES and it leads her to investigate it further, exposing some of the illegal actions of the meat industry in America. This interview also exposes the fact that beef is too expensive for the poorer people of America. However, Ueno has no sympathy and demands that the episode feature a different housewife who is able to provide a beef dish.
