GRILLED WHOLE CORNISH GAME HENS WITH FRESH HERBS Courtesy of Chef G. GarvinServes: 4 to 83 Cornish Game Hens Season salt to taste 1 pinch kosher salt 1 pinch cracked black pepper 2 tablespoons fresh chopped rosemary 2 tablespoons fresh chopped thyme 2 tablespoons fresh minced garlic 4 ounces olive oil Place Cornish Hens on a dry, flat surface and coat with season salt, kosher salt and cracked black pepper.

Combine the rosemary, thyme, garlic and olive oil. Spread herb mixture on game hens. Let hens marinate for 20 minutes to one hour in the refrigerator. Preheat the grill to medium high heat. Remove Cornish Hens from the refrigerator. Grill the Cornish Hens, turning frequently.

Rotate every 5-10 minutes to prevent burning. Remove when the internal temperature reaches 180 degrees Fahrenheit or when the hens are firm and white and the juices run clear. Let hens cool for 10-15 minutes before slicing. G's JERK-GRILLED SPLIT CORNISH GAME HENS Courtesy of Chef G. GarvinServes 4 to 8 4 Cornish Game Hens, split into halves lengthwise along the back bone 1/4 cup olive oilJerk Seasoning Ingredients: 2 tablespoons olive oil 1 large onion, chopped 4 pieces of scallion, chopped 1-3 jalapeño peppers, seeded and chopped 1/2 teaspoon ground allspice 1/2 teaspoon dried thyme 1/8 teaspoon ground cloves 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 2 tablespoons soy sauce 2 teaspoons kosher salt 1/2 cup brown sugar 2 tablespoons lime juice Combine all jerk seasoning ingredients in a food processor and pulse together. Mixture should be thick and somewhat dry. Using a spatula, spread mixture on both sides of Cornish Hens and let rest for 2 hours in the refrigerator. Preheat the grill to medium high heat. Remove Cornish Hens from refrigerator. Rub off excess mixture and coat with a small amount of olive oil. Grill the Cornish Hens, turning frequently. Rotate every 5-10 minutes to prevent burning.
