Those treasured old bottles of Bordeaux tucked away in closets or wine cellars are mostly left alone now; permitted to rest undisturbed until the fall. Similarly, the giant red Rhones are bypassed for a while as the mind and the palate contemplate younger, lighter tastes. As for the great, complex French Burgundies? Out of the question.
