Spring is upon us, and with the change of season a great many wine lovers are inclined to revise their choices of what they want to drink. Those treasured old bottles of Bordeaux tucked away in closets or wine cellars are mostly left alone now; permitted to rest undisturbed until the fall. Similarly, the giant red Rhones are bypassed for a while as the mind and the palate contemplate younger, lighter tastes. As for the great, complex French Burgundies? Out of the question.
