Byline: Scott Ray Chicago native Jimmy John Liautaud, founder of Elgin-based Jimmy John's Gourmet Sandwich Shops, will deliver a commencement address to graduates of the College of Business Administration at the University of Illinois-Chicago in May. Liautaud, 39, opened his first sandwich shop in a converted garage near the campus of Eastern Illinois University in Charleston when he was 19 years old.
