Everyone at the Santa Fe Farmers' Market will be watching for Jake West this month. West, an 80-something organic farmer from Fort Sumner, New Mexico, grows the best melons in the Southwest. And he won't grow his melons in just any field-he finds out which organic crops have been grown there and whether the field has been allowed to renew itself with three successive crops of plowed-under alfalfa. Then he only grows melons in a field once in every 7 to 10 years. A bit picky? Yes, but West's melons are worth his efforts and the price he asks for them.
