This week's look at what's new, mysterious or bountiful in the produce aisles. The kaffir lime is a pear-shaped, gnarled citrus fruit whose leaves are a key ingredient in Thai cooking (so is the fruit itself, and its rind, but we'll focus here on the leaves). For many years, fresh leaves were difficult to find locally, though dried or frozen could be substituted, as could zest from a regular lime. But nothing really can replace the highly aromatic fresh leaf with its strong lemon-lime fragrance, which is increasingly available in Asian markets and some supermarkets.
