Though there are people lucky enough not to have to spend every January resolving to do something about last year's weight gain, we hardly know them. Our friends begin their New Year's resolutions vowing to do something about their spreading waistlines. Our own annual slimming ritual is unrelated to deprivation. It revolves, rather, around changing the menu, so the regular items are banished in favor of a big bowl of chicken soup. It isn't the kind Mother used to make. We begin with poached chicken and use the stock to create soups with Far Eastern flavors. A favorite bowl, a kind of Vietnames...
